The original plan was Biang Biang noodles, but we had no chinkiang black vinegar or chili powder in our kitchen (unseemly, I know). We did, however, have peanut butter, soy sauce, sesame oil, ginger, garlic, and lime. Oh and chili oil. A peanut sauce seemed like an acceptable alternative for accompanying the hand pulled noodles I was adamant about making. Noodle recipe via Mikey Chen of Strictly Dumpling. Peanut sauce recipe via my ever changing ratio adjustment of the ingredients listed above + 1 cup pasta water for thinning. Added green onion, as well as blanched sprouts and a garnish of julienned cucumber and radish (not included in the pictures below due to forgetfulness induced by kitchen chaos).
This dish is also a great party trick for impressing people who don’t realize how easy it is to make.
