Mini Apple Pie

Fun Fact: On Thanksgiving, literally the only places open (at least around where I live) are the gas station and the 7-11. BUT, between the two, you can find apples, flour, sugar, butter, salt, and vinegar. If you already have cinnamon and nutmeg lying around, and maybe some bourbon to add a little something to the filling… this is enough to make an impromptu mini apple pie. You’re welcome.

Recipe (precise instructions and details to come)

Dough:

  • 3 3/4 cups flour
  • 1 1/2 tsp sugar
  • 1 1/2 tsp salt
  • 3 sticks unsalted butter
  • 3/4 cups ice cold water with a dash of cider vinegar in it
  • 1 egg for egg wash
  • sugar to sprinkle on top

Filling:

  • 2-3 apples, peeled & cut into small thin pieces
  • 1 Tbs cinnamon (add more or less to your personal taste)
  • 1/2 cup brown sugar
  • 1 dash vanilla extract
  • 1 hefty dash bourbon
  • 2 Tbs butter
  • salt (to taste)
